After trying a few savory pancake recipes from India & Thailand now let’s try a sweet variety, Danish Aebleskivers! These fluffy Danish donuts are easy to make and absolutely delightful. I got introduced to Aebleskivers when I visited quaint little danish town, Solvang, in California few years ago. I have detailed my experience in the article, “Planet Pancakes“.

These super fluffy Danish donuts do not need to be deep fried, instead baked on top of Aebleskiver pan giving it the distinct spherical shape. Aebleskivers apparently means “apple slices” in Danish, often spelled “Æbleskiver or Ebleskiver” in English and most commonly known traditional Danish food in United States. These very easy to make pancakes require very little preparation time & a lot of fun. You can charm your guests in no time, especially kids. As it is true for all traditional dishes, there are a several variety of Aebleskivers, both savory and sweet. For my first trial of Danish Aebleskivers, I tried the basic eggless Aebleskiver recipe.

All purpose flour – 2 cups
Baking soda – 1 table spoon
Baking powder – 1 tea spoon
Flax seed powder – 2 table spoons mixed in warm water
Butter milk – 1 cup
Powdered sugar – 1/2 cup
Salt to taste

For this eggless Aebleskiver recipe I have used some flaxseeds as binding element in the mixture. There are many methods in practice for eggless baking to individual needs, I have taken a liking to using flaxseeds for it’s nutritional benefits. Typically I use 1 tablespoon of flaxseed per cup of flour used. Mix the powder in half a cup of warm water thoroughly and let it sit till it dissolves and takes glutenous consistency. Along with this usually a table spoon of baking power and a teaspoon of baking soda gives the same texture of using an egg in the same batter. But, I have to admit, I am not a perfectionist when it comes to recipes, I almost never follow recipes word to word, instead I love to experiment and thoroughly enjoy the process of creating something new by making small adjustments here and there.

Like any other type of baking, mix all the dry ingredients first thoroughly and slowly add the liquid ingredients, butter milk, flax seed mixture and keep mixing, you can use a electric mixer if you like for better consistency. Mix all the ingredients together to make a thick paste of pancake batter consistency, add little bit water if required.

Keep your Aebleskiver pan or equivalent on medium to high heat, spray butter into the indentations.

The fun part begins now, one of the key aspect of Aebleskiver is it’s shape and to get to that shape, you have special tool – wood or bamboo skewers. You can buy them on any of the online portals such as Amazon. Once, the pan is hot enough turn it into medium heat and pour the batter to fill the indentations. Leave the batter there for half a minute to one minute. Now, using wood skewers, slowly move around the surface to see if sides are beginning to turn brown and are coming out of the pan. Poke the skewers inside the batter till you touch the pan surface and slowly lift the batter to turn cooked side of the Aebleskiver to an angle so that the uncooked batter pours into the pan.

Leave the batter at this angle for half a min more and repeat turning with wood skewers to pour some more batter into the pan. Trick here is to make sure you turn soon enough where you still have uncooked batter inside that can be poured into the pan and slow enough where you let the side touching the pan is cooked and crispy making it easy to turn the batter. This is not as hard as it sounds, and once you start doing, you will get a hang of it.

Slowly and steadily as you keep turning the Aebleskiver batter, all the batter pours into the pan and beautiful spherical shape forms giving a very fluffy interior to these pancakes. once you have turned the batter 360 degrees and all sides are golden brown remove them from heat onto a plate.

Typically Aebleskivers are served with powdered sugar & raspberry or strawberry jam. Aebleskivers are also  made with some sort of jam filling inside as well, once you have the basic recipe mastered, your imagination is the limit to add different flavors.
